2016 'GARIBALDI FARM' PINOT NOIR - BALLARAT
These 25 yo vines produced extremely low yields but high in quality. Wild yeast ferment (50% whole bunch) in large format oak, this our first Ballarat Pinot, is showing true cool climate qualities; bright cherry on the nose and savoury mid palette with great length and natural acid.
2016 'OLD HOG' PINOT NOIR
Geelong fruit, 50% whole bunch, wild yeast fermented in 1 and 2 tonne wooden fermenters. Light extraction, 1 year in French barriques (of which one third new) then bottled and left a further 12 months before release.
This is an elegant, cranberried, cherried pinot noir with whole bunch characteristics and silky tannins.
2016 'OLD HOG' CHARDONNAY, GEELONG
Early picked Geelong fruit, whole bunch pressed, wild yeast and barrel fermented. Aged in 1/3 new barriques, 1/3 stainless steel barrels and 1/3 old barriques for 1 year.
Good complexity but very approachable now. Great depth of citrus and stone fruits (nectarine tang) well balanced with mild oak and mild butter finish.
2014 'LE SANGLIER' SHIRAZ
100% whole bunch, biodynamic Geelong fruit, wild yeast ferment in 1 tonne wooden fermenter. Aged in large format oak for 3 years, then gravity bottled and left a further 12 months in bottle before release.
This is meaty, smoky, clovey, reductive, punched out with cherry-plum fruit and nutty through the finish.
